Domaine Servin

François Servin, along with his export manager Mark Cameron, direct the operations of this 32 ha domaine. Cameron’s take on the 2017 vintage was that “despite being hit yet again by frost, the growing season was markedly more clement than what we experienced in 2016. Volumes, while still off some 30%, were significantly better than the -70% we realized the prior year. The rest of the growing season actually treated us pretty well as there were no major problems though I confess we were nervous as hail is always a concern. We chose to mobilize our picking crew and began the harvest on the 4th. The fruit was pretty much spotless with good technical figures in terms of sugars and acidities. As to the wines, I really quite like them as they don’t drink like an early harvest vintage the way for example the 2015s do. They offer plenty of classic Chablis typicity with ample soil tones and minerality. I would describe 2017 as a very good if not genuinely great vintage that should drink well early and with mid-term cellaring.”  BURGHOUND
