LIQUOR / Semillon
Semillon's path to vinous recognition came originally as the basis (along with Sauvignon Blanc) of some of the graet dry and sweet white wines of Bordeaux. In the New World its greatest and perhaps uniques expression comes from the dry whites grown in the Hunter Valley in New South Wales. Starting life as inpenetrably acidic the wines gradually unwind with age to reveal gorgeous lemon and lime flavours nuanced by a toastiness. Other regions in Australia have also had notable success including the Barossa and the Margaret River region.
