The wine is a blend of Corvina (65%), Rondinella (30%) and Merlot (5%) and a portion of the vines’ canes are cut prior to harvest to boost concentration. The varieties are fermented separately with natural yeasts and then, after blending, the wine is aged in stainless steel for six months. That all sounds straightforward enough, but this is a wine that needs time in the bottle to evolve and unwind from its assertive frame.
