100% Ribolla Gialla from 20-45 year-old south and west facing vines planted in clay and marl soils 190 metres above sea level at the highest point of the estate. The soils are poorer with a higher concentration of minerals, encouraging less vigorous growth and thicker skins full of antioxidants enabling even lower additions of sulphur. Hand harvested, destemmed and left on skins for 2 months in Slavonian oak. Ferment is spontaneous followed by 2 years' aging in large Slavonian oak and a further year in stainless steel prior to being bottled without filtration, and aged in bottle for a year prior to release. 13.5%. The unique microclimate of the site  makes it possible to take a natural approach in the vineyard, with the ventilation provided by the Adriatic and Alpine winds protecting from disease. Treatments of copper and sulfur are used only when necessary to protect against downy and powdery mildew, vineyards are fully grassed in order to protect biodiversity and retain moisture, yields are low in order to achieve perfect ripeness.
