Certified organic. This comes from four vineyards, two on chalk and two on limestone. 100% destemmed, but they don’t crush, so the whole berries go into the tanks. Fermented in stainless steel and old casks for two to three weeks, no punchdowns, just gentle pumpovers. Aged in used 500-litre oak barrels for 12 months.
