EST is sourced from a unique vineyard on Tassie's East Coast. It provides a different perspective to the predominately Tamar-based wines in the TTT portfolio. Picked last out of all the TTT parcels-a week before Easter this year-for the first time I managed to get enough fruit out of this vineyard to split into a few different ferments, attempting to create a little more complexity. Half of the fruit was fermented super gently, with 15% whole bunch, pressed off early into barrel to finish. The balance of the fruit was split between whole berry ferment and 100% whole bunch, giving me options to create more detail in this wine. Two Tonne Tasmania
