    In the Old World, white vermouth generally comes from France and the sweeter red style from Italy. Both, however are traditionally made from white wine, with caramel adding colour to Italian Styles. The base wine in this vermouth from Giant Steps is biodynamic viognier.  Part of the base wine is distilled and infused with botanicals grown on Giant Steps' vineyards, such as wormwood, juniper, bay leaf, Seville orange, meyer lemon, native lime and cumquat. Complex orange and herb aromas star and finish on the palate , but the balance is the star here - it's not too bitter, not too sweet. Serve over ice or with Four Pillars gin - the distillers of the base wine - to make a 'Yarratini'.BEN THOMAS, Halliday Magazine

    A union between fine Piedmontese wines, aromatic herbs, exotic spices and crystalline sugar generates this classic red vermouth. The slow maturation in steel tanks gives the product an amazing garnet colour with amber reflections that elegantly accompanies the nose the classic elegantly olfactory imprint supported by hints of vanilla and citrus. At the moment of tasting, it releases all its elegance, opening up into a light alcoholic hug it is a prelude to a long and satisfying presence full of subtle spicy and bitter returns.

    Very much made in the pale, bitter and dry spectrum, this vermouth is a decent step up from the more traditional and commercial 'blending' vermouths. This is made from a base white wine of Cortese and Trebbiano with alcohol, sugar, water, an alcoholic infusion of herbs and roots, cardo gobbo di Nizza Monferrato and wormwood - the plant that defines Vermouth di Torino.

    Wonderfully golden yellow in colour with amber reflections, the aromas and palate are expressive and elegant, with marked herbaceous notes of absinthe, cardo gobbo, velvety vanilla and a touch of chamomile. We think it's best served chilled on ice. 16% alc.

    Cinq a Sept is French vernacular for the aperitif time of day. For the uninitiated, Vermouth is a wine based fortified aperitif typically having elements of herb, spice, citrus and bitterness. Most often the wine plays second fiddle to the recipe but with Cinq a Sept it shares equal billing. Expect fresh raspberry fruit laced with refreshing herbs, exotic spice and mild bitterness. Great on ice with a slice of orange or grapefruit, longer with a dash of soda or as a bit player in cocktails like Negroni. ALLIES

    I am totally in love with this product! Why? Because its flippin delicious! Pinot Based vermouth from the man behind Allies David 'Chappy' Chappman. He has just nailed it with this bright, bitter, summery drink. The subtle sweetness is beautifully balanced against the bitter citrus notes and the whole thing just sings. Of course, it's begging for a Negroni but this is so good I would just splash it on some ice with a citrus twist of your choice and a dash of soda. Enough said. MYLES, PWS
