    Raised in tank and aged on fine lees, an abundance of savoury, grassy grapefruit, tangy and beautifully balanced.Lifted tropical fruit, lime and green apple with subtle herbaceous grassy end notes. Light, fresh and dry the palate with a touch of textural slip that carries it through the zingy close. PWS

    The 2016 Simla white field blend by Domaine Simha is a blend of Sauvignon Blanc, Chardonnay and Riesling. It is drinking very well right now. A refreshing, aromatic wine with vibrant floral notes and a slight chalkiness. The Chardonnay in the blend provides the depth and complexity this wine so effortlessly displays, and the Riesling offers a lovely line of acidity.     Sauvignon blanc, Touraine, Loire Valley. Always interesting wines from this producer, often a little left of centre, very expressive, usually very exciting to drink.

    Lemon balm, sea spray, faint cashew nut notes and a lift of faint fino sherry or similar. Very lovely perfume. Crystal clear and refreshing, saline lilt through juicy and concentrated lemon flavours, good length, cool, minerally-salty finish. Very excellent expression, full of vivacity and deliciousness.

    Jonathan Didier Pabiot Pouilly Fume Prelude 2019
    Made in a balanced style, the 2019 Pouilly-Fumé Prelude displays a touch of lees-derived character, a hint of florals and fine nectarine fruit. Pure, refreshing, and really easy, with nice flesh that caresses the mid-palate. This selection from a young-vines parcel provides appealing early drinking, but it has a bit more to it.     This is a blend of sites with younger vines. The wine is whole bunch pressed with a little crushing to give some phenolic impact and that really plays in to the wine beautifully. Saline, snappy and pristinely fruited with a waft of mineral reduction. Finishes with a little grip and a final punch of fruit before fading away and leaving a lovely splash of minerality. It's the kind of wine you will find just sort of vanishes on  warm day. ROSCOE

    Jonathan Didier Pabiot Pouilly Fume Florilege 2019
    A blend of parcels across Pouilly-Fumé, mainly on limestone-clay soils, the 2019 Florilege is a step up from Prelude due to the inclusion of older vines and longer aging on lees in both tank and concrete. The nectarine-fruited expression gently caresses the mouth. It has lovely depth on the mid-palate, a sense of weight and ripeness followed up by a sense of easy texture derived from mainly clay and limestone soils. Nicely balanced REBECCA GIBB MW, Vinous

    Similarly this is a blend of sites but with older vineyard material. It's more concentrated and rounded as it hits the palate. Unlike so many Pouilly there is great texture to it, I find that really appealing, both the weight of the fruit and the skin and lees contact playing their parts in adding tactile interest. It has more fat, in a good way, but there is ample acidity to ensure it's refreshing. There is some barrel ferment (around 10%) and the rest is aged in concrete and left on lees, it adds a smoky, solidsy, element on top of the natural minerality of the region. Quite a sophisticated expression and beautifully handled. This is as far away from the innocuous Sancerre and Pouilly that litter so many wine lists around the planet. Really lovely juice. ROSCOE

    Gerard Boulay 'Tradition' Sancerre Chavignol 2019
    A blend of Chavignol sites, most of the fruit comes from 35-40yo vines lower down the slopes of the sites - and also younger vines from the revered La Grand Cote.

    Boulay's only blended wine, this shows the many facets and brilliance of Chavignol. There's a beautiful density and presence to the wine centred around flavours of wet earth and citrus fruits. A tightly coiled palate emerges and expands with a little air, finishing off with a crushed rocked mouth-watering finish. GABRIELLE POY, PWS

    Domaine Simha 'Raya' Sauvage 2015
    1500 bottles produced from 2 demi-muid (600 litre barrels). Handpicked and whole bunch pressed. Wild fermented in new demi-muids. Left 12 months on lees and then bottled without fining or filtration. A little shy but opens up with citrus and melon with some vanilla and herbal oak characters on the nose. The palate has good depth of  fruit that is softly textured. Nicely balanced with citrus notes. JON
