Twintop cork held on with string. Situated in the heart of Sorbara, in the fertile province of Modena, Paltrinieri is a family-run winery which has been making Lambrusco di Sorbara for three generations. Now, along with his wife Barbara, Alberto, with the help of oenologists Attilio Pagli and Leonardo Conti, care for and vinify 15 hectares of vineyards in the historic area of Christ of Sobara. Estate vineyards only, chalky and sandy soils. Destemming and gentle hydraulic pressing, static settling of juice, fermentation at 18°-20°C, remains on the lees for a period from 60 to 75 days. Re-fermentation occurs in bottle for around 90 days. Only indigenous yeasts. JULIA HARDING MW
