100% whole bunch, wild yeast, pressed after 25 days. Balanced aromas of ripe red fruits, white pepper and dried herbs. On the palate there are blueberries and darker fruits, mocha and earthiness. Fine, chalky tannins, balanced acid give a plush mouthefeel. Minimal sulphur added, aged in 4 -7 yr old oak barriques. Always benefits from decanting. STUART PROUD
