I tasted these wines late at night after a long and tiring day of walking the Ribeira Sacra vineyards, so I was glad I had another bottle to taste with more time, as they are truly chameleons and need time to slowly develop in the glass. The 2012 Finca Pombeiras is a single-vineyard red made with the classical field blend found in the old vineyards; mainly Mencía with a myriad other varieties, Caíño, Sousón, Brancellao, Merenzao, Negreda, Garnacha, Mouratón... The full clusters fermented with indigenous yeasts in open oak barrels. The first bottle I tasted was extremely cold, and it seemed a shy, serious wine, with great poise and depth that while still young showed a great nose of orange peel, wild flowers and blue fruit. A second bottle opened at 15 C revealed that the wine is not shy at all! To the contrary, it's extremely aromatic, but aromatic reds often go into a shell when they are too cold. In fact it's very perfumed, really aromatic and a real expression of Mencía full of violets and wild herbs that is really showy and captivating. It has some earthy tannins that require some time in bottle. There was only one 500-liter barrel where this wine matured for one year. 663 bottles were produced. LOUIS GUTIERREZ,
