Not all base wine is destined to become Fino (or Amontillado) and those parcels that show broader and less refined characteristics are allocated to the Oloroso soleras. By contrast to the production of Fino and Amontillado the flor is killed off immediately and the process becomes simply one of oxidation in barrel. While there are sweeter Orloroso's on the market the best examples are dry and are characterised by darker colour with nutty, toffeed aromatics and a warm and deep texture. The wine is perfect for the winter evenings and also is a classic accompaniment to consomm├ęs and soups. PWS
