    White Rabbit White Ale
    White Rabbit White Ale delivers refreshing hints of coriander, juniper berry and bitter orange, with fresh fruity aromas and only a gentle amount of bitterness. A touch of local honey naturally conditions the ale, with a final abv of 4.5%.

    The second beer from the Healesville brewery is their take on the traditional Belgian witbier style. It’s a fairly restrained recreation, given a touch of both sweetness and dryness from the addition of honey in the kettle. These beers have a history stretching back centuries to the days monks played with spices and fruits in their beers. Here, you’ll find hints of coriander, juniper berry and bitter orange that lend themselves to a welcoming, fruity aroma, particularly when sampled in draft form.

    White Rabbit Dark Ale
    This is a rather dark mahogany coloured ale with a reasonably persistent rocky head. Freshly baked banana bread, toffee and caramel come through strongly on the nose and in the mouth. Big bitterness, evident sweetness and a strong malty finish. An approachable dark beer that does not overwhelm. PWS

    A beer that has been tweaked and refined over its lifespan to become one of the best dark beers in Australia, as evidenced by its gold medal in the 2010 Australian International Beer Awards. A welcoming floral aroma derived from the hop flowers used in the brewery’s hop back and the addition of hops into the tank after fermentation draws you in to a smooth, rich, malt-driven beer full of dark chocolate and light roast characteristics with fruity esters from the open fermentation and a solid bitter finish.

This is the yeast that is still used for the beer. The beer is force carbonated. It is the world's most popular lager, and is particularly successful in Europe.

    Monceau was borne out of a passion for low intervention, natural fermentations.

    Using no sweeteners, artificial carbonation or preservatives, we brew in an ancestral method, naturally fermenting and carbonating to create unique, ever-changing flavour profiles, and alcohol levels above 1%.

    Monceau Pét Nat Fuji Apple Kombucha uses Fuji apples from West Gippsland in Victoria. They have milder tannin and acidity levels, with a healthy sweetness that drives fermentation. Monceau’s flavour profile changes with the seasons and apples sourced. Utilising an ancestral method borrowed from pétillant naturel winemaking, Monceau undergoes two fermentations. The second fermentation, in-bottle, creates natural carbonation and ever-evolving flavour profiles.
